Buttery Apple Torte

Indulgent Italian apple torte with buttery cooked apple slices.
Ingredients:
  • 1/2 cup (8 Tbsp, 1 stick, 4 oz or 125 g) plus 1 Tbsp of unsalted butter
  • 3 Fuji, Jonagold, or Golden Delicious apples, peeled, cored, and cut into slices 1/4 inch (6 mm) thick
  • 2/3 cup (3 1/2 oz or 105 g) all-purpose flour
  • 1/2 teaspoon baking powder (See How to Tell if Your Baking Powder is Still Good )
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup (6 oz or 185 g) granulated sugar
  • 1/2 teaspoon grated lemon zest
Instructions:
  • Preheat your oven to 375°F (190°C). Thoroughly butter a 8- or 9-inch (23cm) round cake pan with 2 inch (5cm) sides, ensuring the bottom is lined with parchment paper and greased.
  • Prepare the apple slices: Melt butter in the microwave or on the stovetop. Reserve 6 tablespoons (3 ounces or 90ml) in a separate bowl. Cook apple slices with the rest of the butter in a large frying pan over medium-low heat, stirring occasionally, until tender, for about 10 minutes. Take off the heat.
  • Prepare the batter: Combine flour, baking powder, and salt in a small bowl. In a separate large bowl, whisk whole eggs and egg yolk until combined. Mix in melted butter, vanilla, granulated sugar, and lemon zest. Gently fold in the flour mixture and apples.
  • Pour the batter into the pan and evenly spread it on top.
  • Bake: Preheat the oven to 375°F and bake for 30 to 35 minutes until the cake is golden brown and springs back when touched. If the top starts to brown too quickly, cover loosely with foil after 20 minutes. Allow the cake to cool in the pan for 5 minutes, then invert onto a plate and remove the pan. Flip the cake back onto a wire rack to cool completely.
