Apple pie filling wrapped in flour tortillas, topped with a buttery sweet sauce for mouthwatering dessert enchiladas.
Ingredients:
  • 2 (21 ounce) cans apple pie filling, coarsely chopped
  • 1 teaspoon ground cinnamon
  • 1 (8 ounce) package reduced-fat cream cheese
  • 0.5 cup confectioners' sugar
  • 0.25 teaspoon ground cinnamon
  • 10 small flour tortillas
  • 0.5 cup brown sugar
  • 0.33333334326744 cup water
  • 0.33333334326744 cup butter
  • 1 tablespoon cornstarch
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Combine the apple pie filling with 1 teaspoon of cinnamon and nutmeg in a bowl.
  • Whip cream cheese, confectioners' sugar, and 1/4 teaspoon cinnamon until smooth. Gently fold in apple pie filling mixture.
  • Fill each tortilla generously with the luscious apple-cream cheese mixture, then roll them up snugly. Place the rolled tortillas seam-side down in a 9x13-inch baking dish.
  • In a saucepan, combine white sugar, brown sugar, water, butter, cornstarch, and vanilla extract. Bring the mixture to a boil, then simmer on low heat, stirring constantly, until the sugar dissolves (approximately 3 minutes). Spread the resulting sauce over rolled tortillas.
  • Bake on the top oven rack until the enchiladas are bubbling, approximately 50 minutes.
