Irish apple cake recipe

Buttery apple cake with sugar crust, perfect for afternoon tea. Serve with custard or cream.
Ingredients:
  • 375g (2 1/2 cups) plain flour
  • 150g butter, chilled, chopped
  • 155g (3/4 cup) caster sugar, plus 55g (1/4 cup), extra
  • 8.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 4 (about 750g) Granny Smith apples, peeled, cored, coarsely chopped (about 2-3cm pieces)
  • 2 eggs
  • 60ml (1/4 cup) milk
  • Vanilla custard or double cream, to serve
Instructions:
  • Preheat oven to 180C/160C fan forced. Flip the base of a 22cm round springform pan, grease with melted butter, line with baking paper, then secure back in place with overhang. Grease the sides of the pan.
  • Combine flour and butter in a large bowl, using your fingertips to rub the butter into the flour until it resembles fine crumbs. Mix in sugar, baking powder, and cinnamon. Add the apple and combine well. In a separate jug, whisk together eggs and milk, then pour into the flour mixture and stir until fully combined. Transfer the cake mixture into a prepared pan and press it firmly with the back of a spoon to spread it evenly. Sprinkle the top with extra sugar.
  • Bake for 1 hour 10 minutes or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a serving plate and enjoy with custard or cream.
