Classic Irish apple cake with a tender crumb, topped with a cinnamon-oat streusel and a flavorful cinnamon glaze for the perfect touch.
Ingredients:
  • Streusel
  • 1/2cup all purpose flour
  • 1/2cupgranulated sugar
  • 1/4cup old fashioned rolled oats
  • 1/4teaspoon table salt
  • 1/4teaspoon ground cinnamon
  • 6tablespoons unsalted butter, cubed
  • Cake Batter
  • cookingspray
  • 1/2 cup unsalted butter, at roomtemperature
  • 1/4 cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon table salt
  • 3 tablespoons whole milk
  • 2 large Granny Smith apples, peeled,sliced 1/4-inch thick
  • Cinnamon Glaze ½ cup powdered sugar
  • 2 teaspoons whole milk
Instructions:
  • For the streusel, mix 1/2 cup flour, 1/2 cup sugar, oats, 1/4 teaspoon salt, and 1/4 teaspoon cinnamon in a bowl. Add butter and blend with a fork or pastry cutter until the mixture resembles coarse bread crumbs, approximately 2 minutes. Refrigerate until needed.
  • Preheat the oven to 350°F (175°C), then generously grease a 9-inch round cake pan with cooking spray.
  • In a medium bowl, cream together 1/2 cup butter, 1/4 cup granulated sugar, and brown sugar until fluffy and lightened in color, about 3 to 4 minutes. Mix in eggs one at a time on low speed until blended, then add vanilla extract.
  • In a small bowl, mix together 1 1/4 cups of flour, baking powder, 1 teaspoon of cinnamon, and 1/4 teaspoon of salt. Transfer these dry ingredients to the mixing bowl and mix on low speed for 1 to 2 minutes until fully combined. Then, add 3 tablespoons of milk and beat on low speed for about 45 seconds until well blended.
  • Evenly smooth out the cake batter in the prepared pan.
  • Layer the apple slices neatly on top of the batter, ensuring they overlap if necessary.
  • Generously coat the apples with the delicious streusel topping.
  • Bake in the oven until a toothpick comes out clean and streusel is golden and crisp, for 40-50 minutes. Allow cake to cool in the pan for 10 minutes on a wire rack, then transfer to a wire rack to cool completely for 30-45 minutes.
  • Combine powdered sugar, 1 teaspoon cinnamon, and 2 teaspoons milk in a small bowl and whisk until mixture is smooth.
  • Drizzle the glaze generously over the cake just before serving.
