Delicious apple shortbread tart - simple and satisfying!
Ingredients:
  • 0.25 teaspoon salt
  • 0.75 cup chilled butter, diced
  • 2 egg yolks, beaten
  • 1.25 pounds Golden Delicious apple - peeled, cored and cut into 1/4 inch slices
  • 0.25 cup light brown sugar, packed
  • 1 tablespoon all-purpose flour
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to 400°F (200°C).
  • In a large bowl, gently sift together four 1/2 cup measurements of sugar and salt. Add butter and blend until the mixture looks like coarse crumbs. Carefully fold in egg yolks; the mixture will appear crumbly. Save 1/4 of the mixture for later, and press the rest onto the bottom and sides of an 8-inch tart shell or pie pan.
  • Combine apples, brown sugar, flour, cinnamon, and nutmeg in a large bowl. Transfer the apple mixture into the crust, then evenly sprinkle the reserved crumb mixture on top.
  • Place the pie on a baking sheet and bake in a preheated oven for 15 minutes. Then reduce the heat to 350 degrees F (175 degrees C) and bake for another 20 minutes, until the top is golden brown and the filling is bubbling.
