Apple-spice shortbread with sweet icing.
Ingredients:
  • 3/4 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2 3/4 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon apple pie spice
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon apple pie spice
  • 1 to 2 tablespoons apple juice
Instructions:
  • In a large bowl, mix brown sugar, butter, vanilla, and egg until light and fluffy. Stir in flour and 3/4 teaspoon apple pie spice until well combined. Divide the dough in half, shape each into a flattened disk, then wrap in plastic wrap and refrigerate for about 1 hour for easier handling.
  • Preheat the oven to 350°F. Roll half of the dough on a lightly floured surface into a 12x6-inch rectangle. Keep the other half of the dough refrigerated. Cut the dough rectangle lengthwise in half, then cut each half into 1-inch-wide sticks. Place the sticks 1/2 inch apart on ungreased cookie sheets.
  • Bake at 350°F for 12 to 15 minutes until edges turn light golden brown. Remove from baking sheets right away and let cool for 10 minutes until fully cooled.
  • In a small bowl, mix all glaze ingredients until smooth, adjusting with apple juice for your preferred glaze thickness. Spread glaze on top of the cookies and allow it to set before storing.
