Delicious apple pie shortbread cookies - perfect for holiday brunch or a cozy dinner dessert. Easy and delightful!
Ingredients:
  • 1 cup butter
  • 0.66670000553131 cup white sugar
  • 1 egg yolk
  • 0.33329999446869 cup apple butter
  • 2.333300113678 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon apple pie spice
  • 0.5 teaspoon vanilla extract
Instructions:
  • In a large mixing bowl, cream together the butter and sugar until fluffy. Mix in the egg yolk and apple butter. Add the flour, cinnamon, apple pie spice, and vanilla, and mix until well combined on low speed.
  • Split the dough in half and mold each portion into a 6-inch disc on waxed paper. Chill in the refrigerator for 30 minutes.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Place one disc of dough into an ungreased 9-inch round pie plate. Press the dough into the plate with lightly floured hands until the plate is completely covered. Use the handle of a wooden spoon to create a decorative edge. Score the dough into 8 wedges and prick the surface with a fork. Repeat the process with the second disc of dough and another pie plate.
  • Bake until golden brown, then transfer to a wire rack to cool completely before slicing into wedges.
