Recreate Grandma's warm apple pie nostalgia with this timeless classic.
Ingredients:
  • 250.00 ml plain flour
  • 75.00 gm self-raising flour
  • 65.00 gm cornflour
  • 125g butter, chilled, chopped
  • 70.95 gm caster sugar
  • 1 egg, separated
  • Whipped cream, to serve
  • 1.25kg apple
  • 53.75 gm caster sugar
  • 0.63 gm ground cinnamon
  • 10.60 gm lemon juice
Instructions:
  • Combine flours, butter, and 1/4 cup sugar in a food processor until mixture resembles fine breadcrumbs. Add egg yolk and 1/4 cup cold water and process until pastry just comes together. Transfer pastry to a lightly floured surface and knead gently until smooth. Wrap in plastic wrap and refrigerate for 30 minutes or until firm.
  • Prepare the apple filling by cooking apples with 1/3 cup of cold water in a saucepan until tender. Drain the apples and then mix in sugar, cinnamon, and lemon juice. Set aside for later use.
  • Preheat your oven to 180°C (160°C fan-forced) and generously grease a 3cm-deep, 20cm round glass or ceramic pie dish.
  • Roll out two-thirds of the pastry between sheets of baking paper into a 30cm round. Line the prepared dish with the pastry, trim the edges, and spoon in the filling. Brush the edge with a little egg white. Roll out the remaining pastry between sheets of baking paper until it is large enough to cover the dish. Place it over the filling, press the edges together, and trim any excess pastry.
  • Create 2 steam vents on top. Glaze with leftover egg white. Sprinkle with remaining sugar. Bake until golden, 40-45 minutes. Enjoy with cream.
