Classic Irish apple cake, perfect with tea or coffee, made simply with pantry staples.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 cup butter, softened
  • 2 tablespoons milk
  • 2 apples, or more to taste - peeled, cored, and thinly sliced
Instructions:
  • Preheat the oven to 350°F (175°C) and grease an 8-1/2x11-inch lasagna dish or roasting pan with butter.
  • Combine the flour, baking powder, and cinnamon by sifting them together in a bowl.
  • Using an electric mixer, cream together the butter and sugar until light and fluffy in a separate bowl. Add 1 egg and 1 tablespoon of the flour mixture. Repeat this process two more times. Gently fold in two-thirds of the remaining flour, followed by the milk, and then fold in the rest of the flour.
  • Evenly layer half of the batter onto the bottom of the prepared dish. Place apple slices over the batter and top with the remaining batter.
  • Bake in a preheated oven at high temperature for 15 minutes. Then, lower the temperature to 325 degrees (163 degrees C) and bake for an additional 30 minutes until golden brown and firm to the touch.
