Sticky apple walnut scrolls

Indulge in this delectable honey dessert that will have you buzzing with delight!
Ingredients:
  • 57.50 gm walnuts, finely chopped
  • 178.75 gm honey
  • 300.00 gm self-raising flour
  • 40g butter, chilled, chopped
  • 169.95 gm milk
  • 45.00 gm firmly packed brown sugar
  • 1 tsp vanilla bean paste
  • 400g can pie apple, drained, chopped
  • Thick vanilla custard, to serve
Instructions:
  • Preheat your oven to 190C/170C fan-forced. Grease a 6cm-deep, 22cm round cake pan, line the base with baking paper, sprinkle with 1/3 cup walnuts, and drizzle with 1/3 cup honey.
  • Sift the flour into a bowl. Blend in the butter until the mixture looks like breadcrumbs. Using a butter knife, mix in the milk until a sticky dough forms, adding more milk if necessary. Transfer the dough onto a floured surface and gently knead it until smooth, adding more flour if needed.
  • Roll the dough into a 20cm x 40cm rectangle. Mix sugar, vanilla, and the rest of the honey in a bowl. Spread the mixture over the dough, leaving a 2cm border. Arrange the apple and remaining walnuts on top. Roll up the dough carefully from one long side, trim the ends, then slice into 8 pieces using a serrated knife. Arrange the slices cut-side up in a pan.
  • Bake for 35 to 40 minutes until golden and scrolls sound hollow when tapped. Allow to cool in the pan for 5 minutes, then transfer to a wire rack over a tray. Enjoy warm with custard.
