Upgrade your Jasmine rice with apple cider, golden raisins, and toasted almonds for a flavorful pilaf twist.
Ingredients:
  • 1.25 cups water
  • 1 cup apple cider
  • 1 cup golden raisins
  • 0.25 cup apple cider vinegar
  • 1.25 cups jasmine rice
  • 1 teaspoon brown sugar
  • 0.25 teaspoon ground cinnamon
  • 1 tablespoon extra-virgin olive oil
  • 1 Granny Smith apple - peeled, cored, and diced
  • 1 small sweet onion, diced
  • 1 stalk celery, diced
  • 0.25 teaspoon ground white pepper
  • 0.125 teaspoon salt
  • 1 dash ground cinnamon
  • 0.25 cup blanched slivered almonds
Instructions:
  • In a pot, bring water, apple cider, and golden raisins to a boil. Stir in rice and cook for approximately 17 minutes, stirring occasionally, until most of the water is absorbed. Add white sugar, brown sugar, and 1/4 teaspoon cinnamon. Cook for an additional 3 minutes until the rice is tender. Remove from heat.
  • In a large skillet over medium heat, sauté apple, onion, and celery in olive oil until softened, for about 5 minutes. Season with white pepper, salt, and a hint of cinnamon. Add almonds and cook until they start to brown, for 3 to 5 minutes.
  • Gently combine the apple and almond mixture with the rice. Allow it to sit for 5 minutes for the flavors to meld together.
