Apple and hazelnut loaf

Delicious fruity and nutty bread, perfect for tea time.
Ingredients:
  • 187.50 gm self-raising flour
  • 50.00 gm hazelnut meal
  • 90.00 gm dark brown sugar
  • 2.50 gm ground cinnamon
  • 70g butter, chilled, chopped
  • 64.38 gm milk
  • 2 small gala apples, unpeeled, cored, halved
  • 20.00 ml dry-roasted hazelnuts, roughly chopped
  • Extra 10g butter, melted
  • Extra 4.00 gm dark brown sugar
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 9cm-deep, 9cm x 19cm loaf pan and line the base and sides with baking paper, leaving an extra 3cm of paper extending above the edge of the pan at the long ends.
  • In a bowl, mix together flour, hazelnut meal, sugar, and cinnamon. Add chilled butter and rub it in until mixture resembles breadcrumbs. Create a well in the center and stir in the egg and milk until just combined.
  • Slice 1 apple thinly to get 15 slices. Grate the rest of the apple. Combine grated apple and chopped hazelnuts into the batter. Pour the mixture into the pan and smooth the top using a spatula. Lastly, position the apple slices skin-side down on top, gently pressing them into the batter.
  • *Gently coat apple slices with a velvety layer of melted butter, then generously sprinkle with extra sugar. Bake for 50 minutes, or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 5 minutes before carefully transferring onto a wire rack, top-side up, to reach the perfect temperature. Indulge in this delicious loaf warm or chilled.*
