Earthy apple cider glazed side dish - perfect with Beef Tenderloin in Port Shitake Reduction.
Ingredients:
  • 2 pounds sweet potatoes, peeled and cubed
  • 0.25 cup toasted, ground hazelnuts
  • 0.5 cup heavy cream
  • 0.25 cup sour cream
  • 0.25 cup apple cider
Instructions:
  • In a large pot, add sweet potatoes and cover with salted water. Boil over high heat, then lower to medium-low, cover, and simmer until tender, approximately 20 minutes. Drain and let steam dry for a minute or two.
  • Blend the potatoes until creamy, then mix in the hazelnuts, heavy cream, sour cream, and apple cider. Season with salt and pepper to your liking.
