Elevate pork with nutty apple filling on the BBQ for irresistible flavor.
Ingredients:
  • 1 large Granny Smith apple, halved, cored, coarsely grated
  • 55g (1/3 cup) dry-roasted hazelnuts, coarsely chopped
  • 62.50 ml chopped fresh mint
  • 2 tsp finely grated lemon rind
  • 1.5kg-piece pork scotch fillet
  • Mashed potato, to serve
Instructions:
  • Preheat a covered barbecue to 200°C. Set up a wire rack in a roasting pan or foil tray for the barbecue. Mix together the apple, hazelnut, mint, and lemon zest in a small bowl.
  • Using a sharp knife, make a horizontal cut in the pork without cutting all the way through. Open the pork and lay it flat. Spread the apple mixture over half of the pork. Roll up the pork to seal in the filling. Tie the pork with unwaxed kitchen string at 2cm intervals and insert a meat thermometer if needed.
  • Position the pan or tray in the middle of the barbecue. Turn off the burners beneath the pan or tray and adjust the side burners to low heat. Close the barbecue lid.
  • Roast the pork for 1 1/2 hours until perfectly cooked. Remove from the oven, cover with foil, and let it rest for 5 minutes. Slice and serve with mashed potatoes.
