Indulge in a guilt-free fruit tart with sweet apples and creamy ricotta for a satisfying dessert.
Ingredients:
  • 3 sheets filo pastry
  • Olive oil spray
  • 150g low-fat fresh ricotta
  • 55g apricot
  • 1 golden delicious apple, sliced
  • 17.20 gm demerara sugar
  • Double cream or yoghurt, optional
Instructions:
  • Preheat your oven to 180°C. Line a 26cm x 16cm slab pan with parchment paper, letting it hang over two edges. Lightly spray one sheet of pastry with olive oil, fold it in half widthwise, and place it in the pan. Repeat with the rest of the pastry sheets.
  • Combine creamy ricotta cheese with 2 tablespoons of sweet apricots. Spread this flavorful mixture over the flaky pastry, then layer with fresh apple slices. Sprinkle the rest of the apricots on top for an extra burst of fruity goodness.
  • Sprinkle the sugar evenly, then bake for 30 minutes. Slice into pieces and enjoy with a dollop of double cream or yogurt, if preferred.
