Apple and vanilla sponge pudding

Delicious apple and vanilla sponge pudding.
Ingredients:
  • 6 granny smith apples, peeled, cored and chopped
  • 107.50 gm caster sugar
  • 40.00 gm water
  • 1 tsp vanilla bean paste
  • 75.00 gm self-raising flour
  • 1.25 gm mixed spice
  • Pure thick cream, to serve
Instructions:
  • Preheat oven to a cozy 180°C and grease a 5-cup ovenproof dish lightly.
  • In a saucepan, combine apples with half of the sugar and water. Cook on medium heat, stirring occasionally, for 5-8 minutes or until apples are tender. Remove any excess liquid and spoon the cooked apples into the prepared dish.
  • Using an electric mixer, whip eggs in a bowl until fluffy. Gradually add the remaining sugar, 1 tbsp at a time, beating until the mixture is thick and creamy. Mix in the vanilla.
  • Sift flour and spice over batter, gently fold, then pour over hot apple.
  • Bake for 25-30 minutes or until a skewer comes out clean when tested. Serve hot with cream.
