Grilled Apple Salad with Vanilla Yogurt

Apple and yogurt salad with fresh greens for a delightful bite.
Ingredients:
  • 2 tablespoons butter, melted
  • 1/2 teaspoon ground cinnamon
  • 3 large apples, cored and cut into 1/2-inch slices
  • 4 cups baby spring field greens
  • 2 containers (5.3 oz each) Greek vanilla yogurt
  • 2 tablespoons chopped walnuts, toasted
  • Additional ground cinnamon, if desired
Instructions:
  • Preheat the gas or charcoal grill.
  • Combine the melted butter and 1/2 teaspoon of cinnamon in a large bowl. Add the apple slices and mix until well coated.
  • Grill apples over medium heat, covered, for 5 minutes. Flip and grill for an additional 3 to 5 minutes until they reach your preferred tenderness.
  • Evenly distribute greens on 4 serving plates. Add apples evenly over the greens. Spoon half a container (about 1/4 cup) of yogurt on top of each plate. Sprinkle with walnuts and a touch more cinnamon for extra flavor.
