Delicious and healthy BBQ ocean trout - perfect low-fat dinner!
Ingredients:
  • 4 x 150g ocean trout fillets, skin on
  • Canola oil cooking spray
  • 2 Lebanese cucumbers, peeled into ribbons
  • 2 granny smith apples, quartered, cored, thinly sliced
  • 2 green onions, thinly sliced
  • 125.00 ml fresh coriander leaves
  • 1 long red chilli, thinly sliced
  • 40.00 ml grated palm sugar
  • 42.00 gm lime juice
  • 24.40 gm fish sauce
  • 9.20 gm peanut oil
  • Lime wedges, to serve
Instructions:
  • Preheat barbecue hotplate or grill to medium-high heat. Coat both sides of fish with oil and season with salt and pepper. Cook fish skin-side down for 3 to 4 minutes until skin is golden and crunchy. Flip fish and continue cooking for 2 to 3 minutes for medium doneness or until cooked to your preference.
  • In a bowl, mix together refreshing cucumber, crisp apple, zesty onion, fragrant coriander, and a hint of spicy chili.
  • In a small bowl, whisk together sugar, lime juice, fish sauce, and peanut oil until well blended. Pour 2/3 of the dressing over the salad and delicately toss to mix well.
  • Present the fish alongside a fresh salad and lime wedges, then generously drizzle with the remaining dressing (refer to note).
