Elevate your breakfast with a simple apple cider syrup to pour over fluffy pancakes for a delicious twist.
Ingredients:
  • 2 cups pancake mix (such as Hungry Jack® Buttermilk)
  • 1.5 cups water
  • 2 small apples - peeled, cored, and diced
  • 2 cups white sugar
  • 1 quart apple cider
Instructions:
  • In a large bowl, stir together the pancake mix and water until smooth. Mix in the diced apples and let the batter rest in the refrigerator for about 15 minutes.
  • In a large saucepan over medium heat, stir sugar until it transforms into a thick amber liquid, about 5 minutes. Lower the heat and slowly pour in apple cider, stirring constantly until syrup consistency, about 5 minutes. Remove from heat and cover.
  • Preheat a greased skillet over medium-high heat. Pour a slightly less than 1/4 cup of batter into the skillet and cook until bubbles appear and edges are dry, for about 1 to 2 minutes. Flip and cook until golden brown on the other side for another 1 to 2 minutes. Repeat with the rest of the batter. Serve with cider syrup.
