Indulge your guests with caramel-drenched apples in individual custard cups for a delightful dessert.
Ingredients:
  • 1 medium apple
  • 3/4 cup sugar
  • 1 tablespoon water
  • 2 eggs
  • 2 egg yolks
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 pint (2 cups) whipping (heavy) cream
Instructions:
  • Preheat the oven to 350°F. Peel and core the apple, then slice thinly and cut each slice in half crosswise. Arrange the apple slices in the bottom of 6 (6-oz) ungreased custard cups.
  • In a heavy 2-quart saucepan, combine 3/4 cup sugar and water. Use a pastry brush dipped in water to clean any sugar off the inside of the pan. Cook over medium-high heat for 5 to 6 minutes until the mixture starts turning amber. Swirl the pan gently as it darkens to a golden brown, being cautious not to burn it. Remove from heat and pour over apples in custard cups. Arrange custard cups in a 13x9-inch pan.
  • Combine eggs, egg yolks, 1/2 cup sugar, and vanilla in a medium bowl and mix with an electric mixer until well combined. Slowly add whipping cream and mix until blended. Pour mixture over caramel in cups.
  • Place the custard cups in a pan and fill the pan with hot water until it reaches halfway up the sides of the cups. Bake for 50 to 60 minutes until a knife inserted in the center comes out clean. (Note: apples may float to the top). Remove cups from water and place them on a wire rack to cool for 30 minutes. Refrigerate for about 1 hour until completely chilled.
  • To unmold, gently slide a thin knife around the inside edge of each cup. Dip the bottom of the cup in hot water for 30 to 60 seconds to release the caramel. Invert onto individual dessert plates and refrigerate.
