Classic spiced apple pie, easy to make!
Ingredients:
  • 375g plain flour
  • 4.00 gm baking powder
  • Pinch salt
  • 160ml olive oil
  • 1 egg yolk
  • 1 egg white, lightly whisked
  • 1.25kg apples, peeled, thinly sliced
  • 21.00 gm fresh lemon juice
  • 115g caster sugar
Instructions:
  • In a mixing bowl, blend together flour, baking powder, salt, and sugar. In a separate bowl, mix oil, egg yolk, and 1/2 cup (125ml) of iced water. Combine wet ingredients with dry ingredients until unified. Knead the dough until smooth, then divide it into two parts. Cover and refrigerate for 30 minutes. Preheat oven to 180°C.
  • Roll out pastry to line a 25cm round pie dish. Brush with egg white, toss apples in lemon juice, and combine sugar with cinnamon.
  • Layer half of the apples in the pastry case and sprinkle with half of the cinnamon sugar. Repeat the layers. Roll out the remaining pastry and cover the apples, pressing the edges to seal. Trim the excess. Make 2 slits on top and creatively decorate with the leftover pastry. Brush with egg white and sprinkle with a little extra sugar before baking.
  • Bake until golden brown, for 40-45 minutes.
