Apple Rice Pudding

Elevate rice pudding with spiced apples and a luxurious caramel drizzle.
Ingredients:
  • 2 tablespoons butter
  • 0.25 cup brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 pinch ground nutmeg
  • 2 apples - peeled, cored, and finely chopped
  • 1.5 cups water
  • 0.75 cup uncooked short-grain white rice
  • 2 cups milk
  • 0.125 cup brown sugar
  • 1 egg, beaten
  • 1 tablespoon butter
  • 0.5 teaspoon vanilla extract
Instructions:
  • In a small skillet over medium heat, melt butter. Stir in brown sugar, cinnamon, salt, and nutmeg. Cook and stir in apples until softened, about 10 minutes. Set aside.
  • In a medium saucepan, bring the water and rice to a boil. Then cover, reduce heat to medium-low, and simmer for about 20 minutes until the rice is tender and water is absorbed.
  • Mix 1 1/2 cups of milk into the rice mixture; heat for 2 to 3 minutes. Blend in brown sugar until fully incorporated. Continue cooking on medium heat until thick and creamy for 15 to 20 minutes. Fold in cooked apples, the rest of the milk, and beaten egg. Stir constantly and heat through for about 2 minutes. Take off the heat and mix in butter and vanilla extract. Serve while warm.
