Caramelised apples with creamy rice

Light and luscious rice pudding with caramelized apples.
Ingredients:
  • 150g rice
  • 200g tub French vanilla lite fruche
  • 2.50 gm ground nutmeg
  • 15.00 gm polyunsaturated margarine
  • 1 pink lady apple, cut into 8 rings
  • 185ml cranberry juice
Instructions:
  • In a small saucepan, combine 1 1/4 cups (310ml) of water and rice. Bring to a boil, then simmer on low. Cover and cook for 12-15 minutes until water evaporates. Remove from heat and let sit for 10 minutes. Stir in the fruche and half of the nutmeg.
  • Melt margarine in a large non-stick frying pan over medium heat. Add apple rings and sprinkle with remaining nutmeg. Cook for 4-5 minutes.
  • Simmer the cranberry juice with the apples for 5 minutes until tender. Serve the rice on plates and top with the apple mixture and pan juices.
