Caramelised apples with ginger cream

Indulge in a royal dessert of sweet, crisp Honeycrisp apples paired with creamy ginger-infused goodness.
Ingredients:
  • 4 Gala apples, ends trimmed, cut into 1cm-thick slices
  • 300ml ctn pouring cream
  • 3.00 gm pure icing sugar
  • 1/2 tsp vanilla bean paste
  • 1.25 gm ground ginger
  • 40.00 ml finely chopped glace ginger
Instructions:
  • Melt half of the butter in a large non-stick frying pan over medium heat. Sear half of the apple slices for 2-3 minutes per side until golden. Transfer to a bowl and cover with foil. Repeat with the rest of the butter and apple slices.
  • In a bowl, use an electric beater to whip cream, icing sugar, vanilla bean paste, and ground ginger until soft peaks form. Gently fold in the glace ginger.
  • Distribute the apple slices evenly on the serving plates and generously spoon the ginger cream over them.
