Caramelised apples with tofu cream

Indulge guilt-free with creamy tofu and caramelized apples.
Ingredients:
  • 220g (1 cup) sugar
  • 80mls (1/3 cup) water
  • 42.00 gm fresh lemon juice
  • 6 new season's apples (like Jonathon)
  • 200g soft tofu or silken tofu
  • 57.20 gm honey
Instructions:
  • In a small saucepan, mix sugar with 60mls (1/4 cup) of water over low heat until sugar dissolves. Let it boil without stirring for 5-7 minutes until golden. Remove from heat, quickly add the remaining 1 tablespoon water and lemon juice (be cautious as mixture may sizzle). Stir until smooth over low heat.
  • Prepare the apples by peeling, coring, and slicing them. Then, combine them with the caramel and bring to a boil over medium heat. Remove from heat.
  • In a food processor, blend tofu and honey until velvety smooth. Serve this luscious tofu cream alongside either warm or chilled caramelized apples.
