Let the kids help make this easy and delicious apple tortilla dessert!
Ingredients:
  • 25g butter
  • 2 (about 150g each) jonathan apples, cored, thinly sliced
  • 80ml (1/3 cup) cold water
  • 100g (1/2 cup) caster sugar
  • 2 fajita tortillas (Old El Paso brand), cut into quarters
  • 18.40 gm vegetable oil
  • 4 x 50g scoops light & creamy 97 per cent fat-free vanilla ice-cream (Peters brand)
Instructions:
  • In a large non-stick frying pan over medium-high heat, melt butter until foamy. Cook apple slices, turning occasionally, until tender, about 4-5 minutes. Add water and half the sugar, cook, turning occasionally, until caramelized and golden brown, about 7-8 minutes. Remove from heat and set aside.
  • For a fun snack, brush tortilla wedges with oil, then press them into sugar to coat. Heat a non-stick pan and cook the wedges until golden brown on each side. Enjoy!
  • On each plate, place a tortilla wedge, a scoop of ice cream, and some caramelized apple. Repeat with the remaining tortilla wedges and apple. Serve promptly.
