Honey-glazed carrots with caramelized apples - a sweet and savory side dish.
Ingredients:
  • 1 lb carrots, thinly sliced (3 cups)
  • 1/2 cup water
  • 1 medium cooking apple, peeled, coarsely chopped (1 cup)
  • 1/4 cup honey
  • 1 tablespoon frozen orange juice concentrate, thawed
  • 2 teaspoons margarine
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Instructions:
  • Heat carrots and water in a 2 1/2-quart saucepan until boiling, then simmer covered for about 5 minutes until crisp-tender. Drain and keep carrots warm.
  • Combine the rest of the ingredients in the saucepan. Simmer over low heat for approximately 5 minutes, stirring occasionally, until the apple is soft.
  • Toss in the carrots and gently mix to coat them. Cook until heated through.
