Fish salad ready in just 15 minutes for a quick and delicious meal.
Ingredients:
  • 2 packages (6 oz each) refrigerated salad-style imitation lobster
  • 1 red apple, halved, cored, thinly sliced (1 cup)
  • 1 fennel bulb, cut in half, thinly sliced (1 1/4 cups)
  • 1/4 cup golden raisins
  • 1/3 cup mayonnaise or salad dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 tablespoons frozen apple juice concentrate, thawed
  • 4 cups torn romaine lettuce
  • 1/2 cup chopped walnuts, if desired
Instructions:
  • Combine imitation lobster, apple, fennel, and raisins in a medium bowl.
  • In a small bowl, whisk together mayonnaise, salt, mustard, and apple juice concentrate until combined. Drizzle over the lobster mixture and gently toss to coat.
  • Divide the lettuce among 4 plates, top with lobster salad, and sprinkle with walnuts for a delightful and elegant dish.
