Warm up with a delicious winter apricot dessert, sweetened with sugar and spices and baked to perfection.
Ingredients:
  • 825g can apricot halves, drained
  • 150g self-raising flour
  • 115g caster sugar
  • 30g hazelnut meal
  • 1.25 gm ground nutmeg
  • 1 egg
  • 125ml milk
  • 80g butter, melted
  • 4.40 gm Queen vanilla extract
  • Ice cream or custard, to serve
Instructions:
  • Preheat the oven to 160°C. Grease 4 ramekins or ovenproof dishes with a 1-cup (250ml) capacity, then evenly distribute the apricots among them.
  • Combine flour, sugar, hazelnut meal, and nutmeg in a bowl, then create a well in the center.
  • Combine egg, milk, melted butter, and vanilla in a bowl. Gradually pour this mixture into the flour and stir gently until just combined.
  • Evenly distribute the batter over the apricots in the ramekins. Place the ramekins on a baking tray and bake for 10-15 minutes until golden brown. Serve with a side of ice cream or custard.
