Classic Christmas turkey with apricot and hazelnut stuffing.
Ingredients:
  • 4kg whole turkey
  • 40.00 ml apricot conserve
  • 57.20 gm honey
  • Gravy, to serve
  • 82.50 ml skinless hazelnuts, chopped
  • 100g butter, chopped
  • 62.50 ml fresh sage leaves, finely chopped
  • 1125.00 ml fresh breadcrumbs
  • 125.00 ml dried apricots, finely chopped
Instructions:
  • Toast hazelnuts in a frying pan until golden, then transfer to a bowl. Cook onion in butter until softened, then mix in garlic and sage. Let cool slightly. Combine with hazelnuts, breadcrumbs, and apricots. Season with salt and pepper. Use to stuff turkey cavities, then secure skin and tie legs with kitchen string. Tuck wings under the turkey before roasting.
  • Place the turkey on a greased wire rack in a large roasting pan and pour 3 cups of water into the pan. In a microwave-safe bowl, combine half of the conserve and half of the honey. Microwave on HIGH for 30 seconds or until melted. Brush the turkey all over with the honey mixture and season with salt and pepper. Cover the pan tightly with lightly greased foil and roast the turkey for 1 hour and 20 minutes.
  • In a microwave-safe bowl, combine the remaining conserve and honey. Microwave on HIGH for 30 seconds or until melted. Remove foil from turkey, then roast for an additional 1 hour and 40 minutes. Baste every 20 minutes with the honey mixture until the turkey is golden and its juices run clear when pierced in the thigh. Cover with foil and let it stand for 15 minutes before serving.
  • Remove and dispose of any string and toothpicks from the turkey before transferring it to a platter. Serve alongside the stuffing and gravy.
