Roast turkey with apricot & pistachio stuffing

Apricot and pistachio stuffing elevates roast turkey.
Ingredients:
  • 6kg (size 60) fresh turkey or thawed frozen turkey
  • 100g butter, melted
  • 140g (2 cups) fresh breadcrumbs
  • 180g (1 cup) Turkish apricots, chopped
  • 80g pistachio kernels, coarsely chopped
  • 125.00 ml chopped fresh continental parsley
Instructions:
  • Preheat your oven to 180°C and adjust the shelf to the lowest position, removing any additional shelves.
  • In a bowl, mix breadcrumbs, apricot, pistachio, and parsley. Stir in eggs until fully combined.
  • Prepare the turkey by cleaning out the cavity and patting it dry. Stuff the breadcrumb mixture inside, then tie the legs together with kitchen string and tuck the wings under. Pour a bit of water into the roasting pan, place the turkey on the wire rack in the pan, and roast it breast-side up.
  • Brush the turkey with butter, then cover it with non-stick baking paper and foil. Roast in the oven, basting every 30 minutes with the remaining butter, for 2 1/2 hours. Remove the paper and foil, baste with the remaining butter, and bake for an additional 45 minutes until golden and juices run clear. Transfer to a carving tray, loosely cover with foil, and let it rest for 15 minutes before carving.
