Apricot and pistachio kulfi

Indian apricot and nut frozen dessert.
Ingredients:
  • Vegetable oil, to grease
  • 375ml (1 1/2 cups) milk
  • 185ml (3/4 cup) sweetened condensed milk
  • 10 cardamom pods, bruised (see note)
  • 55g (1/3 cup) chopped dried apricots
  • 40g (1/4 cup) chopped pistachio kernels
Instructions:
  • Prepare six 125ml (1/2-cup) capacity metal moulds by lightly greasing them with oil. Arrange them on a baking tray. In a medium saucepan, mix together the milk, condensed milk, and cardamom pods. Heat the mixture over medium heat for 2 minutes until it is gently simmering. Remove from heat and let it sit for 30 minutes to enhance the flavors. Strain the mixture and discard the cardamom pods.
  • Mix together the apricots and pistachios. Distribute evenly among the moulds and pour the cooled milk mixture over them.
  • Loosely cover with foil and freeze for 6-8 hours until solid.
  • Allow the dessert to sit at room temperature for 5 minutes before unmolding onto serving plates.
