Elevate your holiday ham with a glorious, fragrant glaze.
Ingredients:
  • 10kg cooked leg of ham
  • Whole cloves, to decorate
  • 250g jar apricot conserve
  • 45.00 gm brown sugar
  • 62.50 gm white wine
  • 2 cinnamon sticks
  • 1 star anise
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Cut 8cm from the shank to remove the ham rind. Gently separate the rind from the fat using your thumb, then peel it back with your fingers. Score the fat diagonally at 3cm intervals to create a diamond pattern, taking care not to cut too deep. Place a clove in each diamond. Finally, wrap the shank end in foil before baking.
  • In a small saucepan over medium-high heat, combine conserve, sugar, white wine, cinnamon, and star anise. Stir and cook for 5 minutes until conserve and sugar melt. Let it sit for 10 minutes. Strain the mixture through a fine sieve to remove solids.
  • Position the ham on a wire rack in a roasting pan and pour boiling water into the pan until it reaches 2cm up the side. Brush the ham with 1/4 of the glaze mixture. Bake for 1 hour and 30 minutes, basting with the mixture every 20 minutes until the ham is golden. Uncover the shank and serve.
