Spice up cream cheese with chipotle peppers and sweet apricot jam for a quick and elegant appetizer ready in 15 minutes.
Ingredients:
  • 12 oz cream cheese (from two 8-oz packages), softened
  • 1 cup shredded sharp white Cheddar cheese (4 oz)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • 1/2 cup chopped pecans
  • 1/2 cup apricot preserves
  • 2 teaspoons finely chopped gingerroot
  • 2 teaspoons chopped chipotle chiles in adobo sauce (from 7-oz can)
  • 48 crackers
Instructions:
  • Place cream cheese, Cheddar cheese, onion powder, and mustard in a food processor. Blend until well mixed, scraping the sides of the bowl if needed. Add pecans and pulse 2-3 times until mixed. Enjoy!
  • Cut out a 7-inch diameter star shape from parchment paper. Spread the cheese evenly over the star shape using a table knife to shape it. Transfer the star shape onto a serving plate and carefully peel off the parchment paper.
  • Combine the preserves, gingerroot, and chiles in a small bowl. Drizzle over the cheese star and serve alongside crackers.
