Elevate your meatballs with a delicious Asian-inspired sauce.
Ingredients:
  • 1 1/2 lb lean (at least 80%) ground beef
  • 1/4 cup Progresso™ plain bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1 egg, slightly beaten
  • 1/2 cup apricot preserves
  • 1/4 cup rice vinegar
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 medium red or green bell pepper, cut into 1-inch pieces
Instructions:
  • Preheat your oven to 375°F and generously coat a 15 x 10-inch pan with cooking spray.
  • Combine the beef, bread crumbs, salt, garlic powder, ginger, and egg in a bowl and mix until thoroughly combined. Shape the mixture into 1-inch meatballs and place them in a baking pan. Bake in the oven, uncovered, for 20 to 25 minutes, or until the meatballs are no longer pink in the center and the juices run clear. Drain any excess liquid before serving.
  • In a 2-quart saucepan, combine preserves, hoisin sauce, vinegar, and red pepper. Heat gently, stirring occasionally, until warmed through. Add drained meatballs and bell pepper, and cook until bell pepper is tender-crisp. Serve with cocktail toothpicks.
