Apricot chutney

Ingredients:
  • 750g fresh apricots, stones removed and roughly chopped
  • 2 large onions, chopped
  • 3 cloves garlic, crushed
  • 250g raisins
  • 9.60 gm salt
  • 360.00 gm brown sugar
  • 40.00 ml fresh ginger, chopped
  • 1 cinnamon stick
  • 2 chillies, seeded and finely chopped
  • 40.00 ml tomato puree
  • 500ml brown vinegar
Instructions:
  • Combine all ingredients in a large saucepan and heat gently until the sugar is completely dissolved.
  • Slowly simmer for approximately 1 hour until the mixture thickens, stirring occasionally to avoid sticking.
  • Transfer the flavorful chutney into sterilized jars.
