Delicious rye bread topped with savory ham and tangy apricot chutney, a perfect anytime meal!
Ingredients:
  • 1 small red onion, diced
  • 200g dried apricots, roughly chopped
  • 125ml white wine vinegar
  • 60g caster sugar
  • 3 cinnamon sticks
  • 20.00 ml freshly grated ginger
  • Salt & freshly ground pepper
  • 8 slices Helgas black rye bread, toasted
  • 40.00 gm low-fat spreadable cream cheese
  • 80g baby rocket leaves
  • 100g 97% fat-free shaved ham
Instructions:
  • In a saucepan, combine the onion, apricots, vinegar, sugar, cinnamon, ginger, and 1/2 cup (125ml) water. Bring to a boil, stirring until sugar dissolves. Simmer on low heat for 20 minutes until apricots soften. Season with salt and pepper.
  • Transfer the mixture into a pristine glass jar and let it cool. Chill in the refrigerator until ready to use.
  • Toast the rye bread until golden. Top with cream cheese, rocket, ham, and a generous dollop of apricot chutney. Serve promptly.
