Ingredients:
  • 6-7kg whole leg ham
  • 340g (1 cup) apricot jam
  • 125ml (1/2 cup) gin
Instructions:
  • Preheat your oven to 170C/150C fan forced. Place a wire rack in a large roasting pan and fill the pan with 2cm of water. Position the oven shelf on the lowest level and remove any additional shelves.
  • With a small sharp knife, carefully cut around the shank of the ham about 10cm from the end. Gently separate the rind from the fat layer by running your fingers around the cut. Lift off the rind while keeping the fat layer untouched. Score the fat in a diamond pattern using the knife.
  • In a small saucepan, warm the apricot jam over low heat until it becomes runny, about 1-2 minutes. Strain through a sieve to remove any fruit pieces, then stir in the gin.
  • Place the ham on the wire rack in the pan, wrap the shank in foil, then brush the glaze over the ham. Bake for 1 hour 30 minutes, brushing with glaze every 15 minutes, until golden and caramelized. Serve.
