Effortlessly whip up this quick gin cocktail for unexpected visitors.
Ingredients:
  • 60g fresh raspberries, plus extra, to serve
  • 12 fresh mint leaves, plus extra, to serve
  • 125ml (1/2 cup) gin
  • 60ml (1/4 cup) fresh lime juice
  • 2 tsp finely grated lime zest
  • 125.00 ml crushed ice, plus extra, to serve
  • 2 x 200ml bottles Pink Lemonade
  • Thinly sliced lime halves, to serve
Instructions:
  • Chill two 185ml (3/4 cup) cocktail glasses in the freezer for 5 minutes.
  • Combine raspberries and mint in a cocktail shaker and muddle using a rolling pin or muddling stick. Add gin, lime juice, lime zest, and ice. Stir well, cover, and shake vigorously for 30 seconds.
  • Fill the chilled glasses with extra ice. Strain the raspberry mixture into the glasses and top with pink lemonade. Garnish with lime slices, extra raspberries, and mint leaves. Serve immediately.
