Gin and tonic pudding recipe

Create a sweet, boozy gin cocktail pudding for a unique treat that combines your favorite drink with a delicious dessert experience!
Ingredients:
  • 355g (1 2/3 cups) caster sugar
  • 150g (1 cup) self-raising flour
  • 375ml (1 1/2 cups) milk
  • 150g butter, melted, cooled
  • 2 tsp finely grated lemon rind
  • 1 tsp finely grated lime rind
  • 60ml (1/4 cup) lemon juice
  • 21.00 gm lime juice
  • 4 eggs, separated
  • 40.00 ml gin
  • Whipped cream, to serve
  • 140g (2/3 cup) caster sugar
  • 125ml (1/2 cup) tonic water
  • 60ml (1/4 cup) gin
  • 1 small lemon, thinly sliced
  • 1 small lime, thinly sliced
Instructions:
  • Preheat your oven to 170C (150C fan-forced).
  • Combine sugar and flour in a large bowl. Mix in milk, butter, lemon and lime zest and juice, egg yolks, and gin until fully incorporated.
  • In a separate bowl, whip egg whites with an electric mixer until they form just-firm peaks. Fold the whipped egg whites into the batter in 3 portions. Pour the mixture gently into a 7cm-deep, 18 x 29cm baking dish. Place the dish in a roasting pan and fill the pan with boiling water halfway up the side of the dish.
  • Bake until the top is firm, ideally for 50 to 60 minutes.
  • Prepare the Gin and Tonic syrup by combining sugar, tonic water, and gin in a medium frying pan over medium heat. Stir until the sugar dissolves. Increase heat to medium-high and bring to a boil. Boil for 5 minutes. Gently drop in lemon and lime slices, boil for another 5 minutes until syrup thickens and citrus rinds are tender. Remove from heat and let it cool for 10 minutes before using.
  • Quickly add a dollop of whipped cream on top of the pudding. Garnish with lemon and lime slices, then gently drizzle half of the syrup over it. Serve the pudding with the remaining syrup on the side.
