French-inspired low-fat brulee with cinnamon apricots.
Ingredients:
  • 1 x 825g can apricot halves in juice
  • 260g (1 cup) low-fat natural yoghurt
  • 57.20 gm honey
  • 0.63 gm ground cinnamon
  • 100g (1/2 cup) caster sugar
Instructions:
  • Evenly distribute the apricot halves and a splash of juice into four 250ml (1-cup) heatproof serving glasses.
  • Mix the yogurt, honey, and cinnamon in a small bowl. Gently pour the yogurt mixture over the apricots in the serving glasses.
  • In a medium frying pan over low heat, gently melt the sugar, stirring occasionally for 3-5 minutes until it caramelises. Remove from heat and set aside until bubbles subside. Drizzle the toffee over the yogurt mixture and enjoy right away.
