Elevate your fried rice game by stir-frying tender chicken with fluffy rice, eggs, mushrooms, and green onions in savory soy sauce. Better than takeout!
Ingredients:
  • 2 cups uncooked white rice
  • 1 tablespoon butter
  • 2 skinless, boneless chicken breast halves - cubed
  • salt to taste
  • 2 eggs, beaten
  • 0.75 cup sliced mushrooms
  • 1 tablespoon soy sauce, or to taste
Instructions:
  • Bring 4 cups of water in a saucepan to a boil. Stir in rice. Cover, reduce heat, and simmer for 20 minutes.
  • In a large skillet over medium-high heat, heat butter until sizzling. Add chicken and sear until golden brown, then season with salt to taste. Remove chicken from skillet and set aside.
  • Stir the cooked rice into the skillet with the chicken to achieve a golden brown color.
  • Scramble eggs in a separate skillet.
  • Combine the chicken, mushrooms, green onions, eggs, and soy sauce with the rice.
