Argentinian beef empanadas

Spiced Argentinian beef empanadas - perfect for a flavorful party appetizer!
Ingredients:
  • 1 small onion, finely diced
  • 2 tsp finely diced garlic
  • 2 x 500g packet butcher 3 star beef mince
  • 2.50 gm ground cumin
  • 5.00 gm smoked paprika
  • 1/4 tsp cayenne pepper
  • Pinch of cinnamon
  • 44.40 gm tomato paste
  • 62.50 ml currants
  • 125.00 ml roughly diced parsley
  • 80g olive
  • 3 eggs, hard-boiled and roughly diced
  • 10 sheets of puff pastry, defrosted
  • 1 egg, lightly beaten
Instructions:
  • Preheat the fan-forced oven to 180°C.
  • Heat oil in a large frypan over high heat. Cook onion until lightly golden, then add garlic, cumin, paprika, cayenne pepper, and cinnamon for 2 minutes. Add beef, breaking it up with a spatula and cook until golden. Stir in tomato paste and currants, simmer for 5-10 minutes. Finish by mixing in parsley, olives, eggs, and season with salt and black pepper. Enjoy!
  • Cut a 15cm circle from a puff pastry sheet. Spoon a generous tablespoon of filling onto the center of the pastry round. Fold the pastry in half to create a half-moon shape, sealing the edges by pinching them together. Place the turnovers on a baking tray lined with parchment paper. Repeat the process with the remaining pastry and filling.
  • Brush the empanadas with a light egg wash before baking. Bake in the oven for 25-30 minutes until they turn golden and the pastry is fully cooked. Serve them warm.
