Argentinian beef empanadas with potatoes, eggs, and spiced ground beef - a delicious, hearty recipe.
Ingredients:
  • 2 medium potatoes
  • 1 tablespoon butter
  • 2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 pound lean ground beef
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 0.75 cup green olives, pitted and chopped
  • 2 hard-cooked eggs
  • 24 empanada pastry rounds
Instructions:
  • In a large pot, cover the potatoes with water and bring to a boil. Simmer over medium-low heat until just tender, about 8 minutes. Drain the potatoes, then peel and cut them into cubes. Set aside.
  • In a large skillet, melt butter and sauté onion and green onions until softened for about 5 minutes. Add bell pepper and cook for an additional 3 minutes. Mix in ground beef, cooking and stirring until browned, around 5 minutes. Season with paprika, cayenne pepper, and salt.
  • Take the beef mixture off the heat and mix in the potatoes and olives. Gently fold in the chopped hard-cooked eggs and let the filling cool for approximately 20 minutes.
  • Preheat the oven to 425°F (220°C) while lining and lightly greasing 2 baking sheets with olive oil-coated aluminum foil.
  • Lay an empanada pastry round on a flat surface and moisten the edges gently with warm water. Spoon a generous tablespoon of cooled filling in the middle and fold the dough over. Seal the edges by pressing with a fork. Repeat with the remaining rounds and filling. Place the empanadas on the baking sheets and brush with beaten egg.
  • Bake until beautifully golden, about 15-20 minutes in the preheated oven.
