Fresh green beans tossed with tangy feta for a vibrant side dish.
Ingredients:
  • 2 teaspoons olive oil, or as needed
  • 1 red bell pepper, chopped
  • 1 tablespoon minced garlic, or to taste
  • salt and ground black pepper to taste
  • 1 pound green beans, cut into 1-inch pieces
  • 0.25 cup white wine
  • 0.25 cup crumbled feta cheese
Instructions:
  • In a skillet over medium heat, heat olive oil until shimmering. Add red bell pepper and garlic to the skillet; season with salt and black pepper. Sauté until the bell pepper is tender, about 5 to 7 minutes.
  • Combine green beans, bell pepper, and white wine in a skillet. Cover and cook until green beans are tender, approximately 10 minutes.
  • Stir the green beans, sprinkle feta cheese over them, cover, and cook until the feta softens, about 3 minutes.
