Arizona-style side dish with prickly pear cactus and pinto beans - a taste of the American Southwest in minutes!
Ingredients:
2teaspoons vegetable oil
2potatoes, cut into small rectangles
1cupshreddedcarrots
2.5 (15 ounce) jarsnopalitos cactus, drained
1tablespoonchili powder
2clovesgarlic, minced
2teaspoons fenugreek seeds
2teaspoons ground coriander
0.5 teaspoonground cumin
1 (15 ounce) canpinto beans
Instructions:
In a skillet, warm oil over medium heat. Add in potatoes and carrots, stirring occasionally, until potatoes are tender, approximately 10 minutes.
Combine cactus, chili powder, garlic, fenugreek seeds, coriander, and cumin with the potato mixture. Cook until cactus is tender, about 5 minutes. Gently stir in pinto beans and cook until heated through, about 3 minutes.
