Arizona-style side dish with prickly pear cactus and pinto beans - a taste of the American Southwest in minutes!
Ingredients:
  • 2 teaspoons vegetable oil
  • 2 potatoes, cut into small rectangles
  • 1 cup shredded carrots
  • 2.5 (15 ounce) jars nopalitos cactus, drained
  • 1 tablespoon chili powder
  • 2 cloves garlic, minced
  • 2 teaspoons fenugreek seeds
  • 2 teaspoons ground coriander
  • 0.5 teaspoon ground cumin
  • 1 (15 ounce) can pinto beans
Instructions:
  • In a skillet, warm oil over medium heat. Add in potatoes and carrots, stirring occasionally, until potatoes are tender, approximately 10 minutes.
  • Combine cactus, chili powder, garlic, fenugreek seeds, coriander, and cumin with the potato mixture. Cook until cactus is tender, about 5 minutes. Gently stir in pinto beans and cook until heated through, about 3 minutes.
