Cheesy, crisp Arizona quesadillas with buttery tortillas, melted cheese, and mild green chiles.
Ingredients:
  • One large, burrito-size (13-inch diameter or larger) flour tortilla
  • 1 Tbsp butter
  • 1/2 cup of grated cheddar cheese
  • 1 or 2 roasted green chiles, peeled, seeded, cut into strips (optional)
Instructions:
  • Preheat your oven to 350°F with the rack positioned in the middle.
  • Cover the entire surface of the flour tortilla with butter, ensuring it reaches the edges: Gently spread butter evenly over the tortilla placed on a large baking sheet, using a dark sheet for best results. Remember, the butter enhances the flavor of the cheese crisp, so be generous!
  • Bake the buttered tortilla until lightly toasted, about 6 minutes based on your oven.
  • Lay the tortilla on a baking sheet and top with cheddar cheese, leaving a 1/2-inch border around the edges. Arrange green chile strips in a star pattern if desired. Return to oven and bake for 2 minutes or until cheese is melted. Enjoy! For a convection oven method, preheat to 375°F, place the tortilla in the cold oven and bake for 7-10 minutes. Sprinkle with cheese and return to the oven for a few more minutes.
