Elevate your senses with vibrant miso noodle soup featuring colorful veggies. Quick and convenient one-pot meal saves time and effort. Just add boiling water to noodles for a hassle-free and delicious dinner experience.
Ingredients:
  • 200 g vermicelli rice noodles
  • 2 vegetable stock cubes
  • ½ teaspoon Chinese five-spice
  • 4 cm piece of ginger
  • a few sprigs of coriander
  • ½ a bunch of spring onions
  • 1 red chilli
  • 1 carrot
  • 100 g small button mushrooms
  • ½ a sweetheart cabbage
  • 100 g frozen peas
  • 2 teaspoons white miso paste
  • 1 lime
Instructions:
  • Boil the kettle. Divide noodles among four bowls and cover with boiling water. Allow to rehydrate while prepping the broth. In a pan, combine 1.5 liters hot water, stock cubes, and five-spice. Add sliced ginger, coriander stalks, chopped white spring onions, half of the chili, matchstick carrots, chopped mushrooms, shredded cabbage, and peas. Simmer for 2 minutes, then add miso, lime juice, salt, and pepper. Drain the noodles and divide among bowls with broth. Garnish with curled spring onions, reserved coriander leaves, remaining chili, and carrot ribbons. Serve with lime wedges.
