Make authentic Mexican rice at home with this easy arroz a la Mexicana recipe. Infuse rice and veggies with pureed onion, jalapeno, and garlic for a delicious twist.
Ingredients:
  • 1 medium white onion
  • 2 medium jalapeno peppers, halved lengthwise and seeded
  • 2 cloves garlic
  • 2 tablespoons tomato paste
  • 2 tablespoons Country Crock® Spread
  • 1 cup uncooked parboiled (converted) rice
  • 1 cup frozen peas and carrots
  • Salt and ground black pepper to taste
Instructions:
  • In a food processor or blender, blend together onion, peppers, garlic, tomato paste, 1/4 cup water, and salt until a smooth mixture forms; then set aside.
  • In a 12-inch skillet over medium-high heat, melt Country Crock® Spread. Add rice and cook, stirring occasionally, for 2 minutes until golden. Stir in 2 1/4 cups water, green peas, carrots, and onion mixture. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 20 minutes until rice is tender. Let it stand for 5 minutes before serving. Season with salt and pepper to taste.
