Arroz con Tocino (Puerto Rican Rice with Salt Pork)

Try this delicious Puerto Rican Arroz con Tocino for a quick and versatile meal - rice with salt pork (or bacon) and a fried egg on top. Perfect for any time of day!
Ingredients:
  • 2 cups white rice
  • 1 pound salt pork, or thick cut bacon, diced
  • 1 cup white onion, minced
  • 3 cloves garlic, minced
  • 1 heaping tablespoon recaito seasoning base, store-bought or  homemade
  • 3 3/4 cups water
  • 1/4 teaspoon black pepper
  • Cilantro, to garnish
  • 1 large egg per serving, optional
Instructions:
  • Place the rice in a fine mesh colander or strainer. Rinse it under cold running water until the water runs clear to remove excess starch that can make the rice sticky. Let the rice drain completely in the colander.
  • For perfectly cooked pork: Simmer the pork in water for 15 minutes, then rinse and cool before moving on. (Bacon users, feel free to skip this step!)
  • Cook the diced pork in a heavy bottomed pot or Dutch oven over medium heat for 4 to 6 minutes until golden brown and crisp. Use a slotted spoon to remove the pork and drain on paper towels.
  • Sauté the onions, garlic, and recaito: Leave 2 tablespoons of pork fat in the pot. Sauté the onions until glossy for about 2 minutes. Stir in the minced garlic and recaito, cook for another minute until fragrant.
  • In a pot, stir together the drained rice, onion, and pepper until well combined and the rice is coated with fat. Toast the mixture for about a minute, then pour in the water and bring to a boil.
  • Prepare perfectly steamed rice: After the water comes to a boil, reduce the heat and cover the pot with aluminum foil, ensuring a 2” overhang. Then, cover with the lid to create a tight seal for steaming. Let it cook for twenty minutes without uncovering. Check for doneness, then fluff the rice with a spoon once fully cooked.
  • Mix the pork, rice, and cilantro: Gently incorporate the reserved pork into the cooked rice and top with cilantro for a burst of flavor, if preferred.
  • Fry your preferred style of egg and place it on top of the rice before serving.
